• A chicken or a hen
  • Onions
  • Garlics
  • Carrots
  • Leeks
  • Celery
  • Salt
  • Thyme and bay
  • Water
  • Oil

You can use a pot if you don’t have a typical “coquèla”. Boil the chicken or hen in salty water with all the vegetables for 3/4 of an hour. Don’t let it cook completely. Fry the drained chicken with the garlic, finely diced onions, salt and condiments in the pot or coquèla. When the chicken is browned, add the vegetables and cover with the charcoal until it is completely cooked.
